ORONTES YOGURT
BANANA BREAD
Ingredients
1 cup mashed bananas
(about 3 bananas)
1 cup plain yogurt
2 large eggs
1/2 cup sugar
4 Tbsp butter, melted
1 tsp vanilla extract
1.5 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
3/4 cup chopped walnuts,
pecans or chocolate chips
- Preheat oven to 350ºF. Grease the bottom and sides of a loaf pan with butter.
- Mash the banana and add it to a large bowl along with the yogurt, eggs, sugar, melted butter, and vanilla. Mix until well combined.
- In a separate bowl, sift and stir together the flour, baking powder, baking soda, salt, and nutmeg.
- Pour the dry ingredients into the bowl of wet ingredients and stir just until there is no flour remaining (Be careful to not over stir). Gently fold in the chopped walnuts, pecans, or chocolate chips.
- Pour the batter into the prepared loaf pan, then bake at 350ºF for 60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the banana bread cool in the pan for about 15 minutes. Gently turn the loaf onto a wire rack to finish cooling. Once cool, slice and serve.
